This project focuses on studying and utilizing a collection of winemaking strains isolated from samples in the region to enhance the characteristics of local wine production. The selected strains will be provided to wine-growing companies in Basilicata for the production of various wines, forming starters with native strains specific to the production areas. The goal is to create a bank of indigenous strains with oenological potential, serving as an alternative to commercial yeasts. This initiative aims to strengthen the connection between the territory, production environment, and final product, potentially leading to the introduction of new high-quality wine products. The availability of autochthonous yeast strains can add value to the wine sector by aligning products with the unique features of the region, thus opening up opportunities in both domestic and international markets.
